I know that the Sapphire 3870 is a gaming card and the Quadro FX5600 is for Serious CAD and professional work, but I do both. Which would be a better all around setup 2 SAPPHIRE Radeon HD 3870 512MB 256-bit in Crossfire or Quadro FX5600 1.5GB 384-bit.

Also can I run Crysis at the highest settings with either setup?

First, there isnt a video card on the planet capable of runing Crysis on max settings.. Second if you do any gaming at all Id go with the crossfire setup.

For CAD work, the Quadro is overkill, I'd stick with the Radeons.  If however, you do pro 3D rendering with apps like Maya, then the Quadro will destroy the Radeons.  How would you say you split your time? 50 / 50?  75 / 25 in favor of work / gaming?
